Pumpkin Sunflower Bread

Delicious and moist pumpkin bread with sunflower microgreens. Sunflower microgreens are nutty and slightly tangy. They add lots of nutrition and protein as well as an interesting flavor to baked items. 

Pumpkin Sunflower Bread (makes 2 loaves)

Ingredients

  • 1 ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 teaspoons vanilla extract
  • 1 cup pumpkin puree 
  • 3 cups all-purpose flour
  •  ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoon ground cinnamon
  • ½ teaspoon nutmeg
  • 1 cup chopped sunflower microgreens
  • ½ cup chopped nuts (optional)

Instructions

  1. Preheat oven to 350 degrees. Grease and flour 2 loaf pans. 
  2. In a medium bowl or stand mixer, beat sugars, oil, eggs, vanilla extract, and pumpkin purée until well combined and creamy.
  3. In a separate medium bowl, mix dry ingredients including flour, salt, baking soda, baking powder, cinnamon, and nutmeg. 
  4. Add dry ingredients slowly to the wet ingredients until just combined. 
  5. Fold in chopped sunflower microgreens and nuts if using them. 
  6. Fill prepared loaf pans equally.
  7. Bake for 1 hour. Bread is done when tops are slightly domed and toothpick comes out clean.
